Burrito Bowl

The burrito bowl is made up of 5 different components, so we’ve added for the ones you need and then put it altogether down below.

The Hommous

Ingredients

1 can of chickpeas or 400g precooked chickpeas

2 tabs tahini

A pinch salt

Sprinkle of ground cumin

Sprinkle of smoked paprika

A touch of pepper

2 tabs Olive oil

Method

Whack all the ingredients in bullet or blender and whizz until smooth. Add salt and more spices until you reach your desired flavour.

This will go on top of your burrito bowl.

The Beans

Ingredients

1 can black beans or 400g precooked black beans

Chilli flakes

Turmeric

Salt & Pepper

Method

in a saucepan with a dash of oil or butter pop in the chilli flakes, turmeric salt and pepper and stir until they release their fragrance.

Add in the black beans and mix spices through until they are well covered.

Take off the heat and pop aside.

The salsa

Ingredients

A bunch of coriander

A punnet of cherry tomatoes or 3 x medium tomatoes

1 cucumber

1/2 a lime

Green or Red Capsicum or both

Red onion (optional)

Method

Roughly chop all ingredients and pop them in a bowl, mix through the juice of half a lemon. Serve straight away or allow to sit for an hour in order to allow the flavours to combine.

Bringing the Burrito bowl altogether..

Ingredients

Cooked Basmati rice

Corn kernels removed from the cob

1/4 Avocado ( delicately sliced for a photo finish)

Your Salsa

Your Hommous

Your Beans

A sprig of coriander

Method

Place rice, corn, salsa and beans around the edges of your empty serving bowl.

Top with hommous, avocado and your sprig of coriander.

Take a photo of your masterpiece and then eat!
