Carob and Banana Loaf

Ingredients

2 eggs

2 Bananas mashed

100g butter

1/4 cup Coconut Sugar

1 tsp ground ginger

1 tsp Vanilla extract

1 tab Maple syrup

1 tsp Baking powder

1 cup Besan flour

1/2 cup carob powder

1/4 cup desiccated coconut

Pinch salt

Method

Preheat oven to 180 degs and line a loaf tin with baking paper.

Cream butter and sugar together until smooth, add mashed banana and beaten eggs, mix well. Add ginger, vanilla and maple syrup.

Combine all dry ingredients and add in parts stirring in between to create a smooth batter.

Pour batter into your prepared tin and place in the oven for 30 minutes.

Enjoy warm or once cooled, with butter or just as is.
